This is a birthday cake I made recently (OK not that recently, almost a year ago now!) for my brother when he turned 21. He’s a card player, so it was a doubly appropriate design.
One cake is chocolate, one is vanilla, and they both have a cherry filling. They are covered in “American” Buttercream, which I try to avoid now. These days I prefer to work with a Swiss or Italian Meringue Buttercream.
If I were to recreate this cake today, I would have covered it in fondant for a smoother finish, and made the spade out of fondant as well. However, at that point in time I wasn’t working in fondant.
Below is a slightly angled shot to give you an indication of the thickness of the cake.
You’ll have to excuse the photo quality; I haven’t got my editing software installed on this machine, but I promise to take the electrical cords out of the background next time ![]()
