These cupcakes are the oldest thing on this site, I think. I made them in June of 2007, before I’d even taken any decorating classes. They were peanut butter cupcakes with chocolate frosting made from a Betty Crocker cookbook, and the decorations were made from marshmallow fondant. (I particularly like the pacman cupcake.)
Sometimes with the cake decorating, like anything else, I forget how far I’ve come. I tend to look at the cakes I make and think, “This could be better, that’s crooked,” etc. and forget that just two short years ago, if you’d said to me, “In two years you’re going to be able to make miniature royal icing roses on toothpicks and wires, and you’ll be fairly proficient in Oriental Stringwork,” I would have said, “What?” But, these are two things I have been working on in my current decorating class. Neato!

Here’s a recent cake, for once. This one was a yellow cake (from my new favourite yellow cake recipe, “Essential Yellow Cake” from the book Wedding Cakes You Can Make by Dede Wilson) with a lemon butter filling, covered with a thin layer of vanilla buttercream (an OK Italian Meringue Buttercream from a recipe I probably won’t use again) and rolled fondant (the McCall’s brand, which is HEAD AND SHOULDERS BETTER than the WIlton kind!!)

I wasn’t happy with the writing on this cake at all. It’s crooked, and block-y, and I didn’t like it one bit. I also dropped the FoodWriter and made a mark on the cake, so I had to make the line where the mark was - hence why the lines do not meet in the centre of the button. Anyhoo, I would get a chance to re-do my writing the day after I made this. I left it on the table in a cardboard cake box, and when I got up the next day my cat had SAT ON THE BOX AND CRUSHED THE CAKE. I’m not even kidding. Thankfully, it was salvageable, and my second go at the writing looked much better. Yipes.

My final project cake for Wilton Course 2.
Another cake that is over a year old! This one was for my second Wilton Course, so I had to make the cake from the book. If I remember, this was just a box mix cake (since it was just for a class and I was in a hurry) with a pudding filling, and vanilla buttercream. The flowers are made from royal icing, the leaves are buttercream, and the bird is colour flow.

This cake. This is over a year old now, but let me tell you, I have never seen a child enjoy something so much as the birthday girl enjoyed this Pocoyo cake. She squealed for an hour. I have no idea who the hell Pocoyo is, but I have it on good authority that he looks like this. This cake was probably just a plain yellow cake with vanilla buttercream frosting and filling–it’s hard to remember now. And if you’re wondering why the rest of the cake is so plain, it’s because she was going to be smashing it at the party!

Goodbye Cake for Jo

Well, it’s been forever, so I will keep this post short and sweet and get right to the cakes. Once again I am without my picture editing software as I have again changed computers, but here are the best shots I got of this one. It is a white cake with berry-rhubarb filling and vanilla buttercream frosting. As you can see, it’s decorated with a basketweave, and leaves. (Hence the “leaf-ing” if my terrible pun wasn’t clear.) Enjoy!
