It’s a shame I take such cruddy pictures, but these are some shots of the beach-themed cupcakes I did for a bridal shower recently.

These were strawberry cupcakes with vanilla buttercream, and oh my were they good. I’m not always a huge fan of strawberry but these were made with fresh strawberry puree and came out quite moist and tasty. All 80 of them!

The pictures don’t do these little beauties justice! Half were mini-cupcakes, and half were regular-sized. The cupcakes were lemon, with a coconut buttercream frosting. They tasted pretty good if I do say so myself.

They are decorated with a variety of royal icing flowers, including daffodils, drop flowers, pansies, and roses. Purty.

Mother’s Day has come and gone, and with it, this yummy cake that I made for my mom. This was a yellow cake, frosted with vanilla buttercream (the best batch of Italian Meringue Buttercream that I have made, in my opinion) and filled with mocha buttercream. It is sitting on an embossed, fondant-covered board (apparently I loved that technique!) and is decorated with royal icing leaves, roses, drop flowers, daffodils, pansies, an apple blossom or two and one chrysanthemum. The border is reverse shells, although in some spots it doesn’t look very reverse-y. My one regret is that the word “Mom” is crooked!! I must have had the cake crooked on the turntable when I wrote it. D’oh. Oh well, my mommy loves me anyway, haha.

Birthday Cake for Wes

This cake smelled as good as it looks - if you like chocolate that is. Inside was a white cake, and it was filled with a mocha/Bailey’s filling. I could critique all the things I think are wrong with it, but instead I’ll simpy say that it has an overlapping leaf border, some sort of stylized vine and leaf design on the sides, and a pile of roses on top. It had very good flavour, but the cake itself was too dry for my tastes. I think I’ll be switching recipes again; I really prefer a moister cake.

Tasty Cupcakes Part 2

These cupcakes are the oldest thing on this site, I think. I made them in June of 2007, before I’d even taken any decorating classes. They were peanut butter cupcakes with chocolate frosting made from a Betty Crocker cookbook, and the decorations were made from marshmallow fondant. (I particularly like the pacman cupcake.)
Sometimes with the cake decorating, like anything else, I forget how far I’ve come. I tend to look at the cakes I make and think, “This could be better, that’s crooked,” etc. and forget that just two short years ago, if you’d said to me, “In two years you’re going to be able to make miniature royal icing roses on toothpicks and wires, and you’ll be fairly proficient in Oriental Stringwork,” I would have said, “What?” But, these are two things I have been working on in my current decorating class. Neato!
