It’s a shame I take such cruddy pictures, but these are some shots of the beach-themed cupcakes I did for a bridal shower recently.

Starfish and seashells and castles, oh my!
think I like the tiny shovels the best.
These were strawberry cupcakes with vanilla buttercream, and oh my were they good. I’m not always a huge fan of strawberry but these were made with fresh strawberry puree and came out quite moist and tasty. All 80 of them!

The pictures don’t do these little beauties justice! Half were mini-cupcakes, and half were regular-sized. The cupcakes were lemon, with a coconut buttercream frosting. They tasted pretty good if I do say so myself.

Regular-Sized Flower Cupcakes
They are decorated with a variety of royal icing flowers, including daffodils, drop flowers, pansies, and roses. Purty.

Tasty Cupcakes Part 2
These cupcakes are the oldest thing on this site, I think. I made them in June of 2007, before I’d even taken any decorating classes. They were peanut butter cupcakes with chocolate frosting made from a Betty Crocker cookbook, and the decorations were made from marshmallow fondant. (I particularly like the pacman cupcake.)
Sometimes with the cake decorating, like anything else, I forget how far I’ve come. I tend to look at the cakes I make and think, “This could be better, that’s crooked,” etc. and forget that just two short years ago, if you’d said to me, “In two years you’re going to be able to make miniature royal icing roses on toothpicks and wires, and you’ll be fairly proficient in Oriental Stringwork,” I would have said, “What?” But, these are two things I have been working on in my current decorating class. Neato!
