Flavours, Fillings, and Decorations

The Cake

All my cakes are made from scratch using only the finest ingredients available - no cake mixes here. You’ll never go back to a boxed cake mix after trying one of my cakes! My favourite recipes include:

  • Chocolate
  • Vanilla-Bea
  • Coconut

  • Strawberry

Have something else in mind? Just ask! Please note that sponge or chiffon cakes such as Angel Food do not tend to hold up well under heavy frostings and decorations such as those found on wedding cakes.

The Filling

Your choice of filling for the cake will depend on a number of factors, including when and where you plan to serve the cake. Some fillings do not require the cake be refrigerated, while others (such as whipped cream) do. While you can always opt to fill the cake with your preferred flavour of buttercream, you could also try:

  • Fruit curds
  • Lemon Butter
  • Fresh fruit purees
  • Chocolate Ganache
  • Many more

The Frosting

Fondant (or “rolled fondant”) is used on many wedding and special-event cakes to achieve a perfectly smooth finish. It is made mainly of sugar, and can be tinted any colour of the rainbow. Fondant can be flavoured with white chocolate, regular chocolate, or marshmallow.

Cakes decorated with fondant will have a layer of buttercream underneath the fondant. Buttercream is also the frosting I use most commonly for cakes that are not covered with fondant, although there are other options as well if you’re not a fan. I make my buttercreams (generally Swiss Meringue) with real butter, fresh Madagascar Bourbon vanilla beans, pure extracts, and real chocolate. I do, however, prefer to use the carton pasteurized egg whites so there are absolutely no concerns about food safety. Buttercream can be just about any flavour you can imagine. My favourites include:

  • Bailey’s

Decorations

Decorations and embellishments may be made or carved from fondant, buttercream or royal icing, gum paste, cake, marshmallows, crisp-rice marshmallow treats (ie/ Rice Krispie Squares), or candy. Some decorations may include floral wire, dowels, lustre dusts, straws etc. but rest assured that anything that touches your cake will be food safe.
